Ingredients

French Toast

  • Butter, for greasing and serving
  • 1 loaf gluten free bread
  • 8 eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 tbsp vanilla extract
  • Warm maple syrup, for serving
  • 1 cup fresh blueberries, for serving

Crumble Topping

  • ½ cup gluten free all-purpose flour
  • ½ cup firmly packed brown sugar
  • 1 tsp cinnamon
  • ¼ tsp salt
  • Freshly grated nutmeg (optional)
  • ½ cup cold butter, cut into pieces

Instructions

  1. Prepare the French Toast

Grease a 9 x 13-inch baking dish with butter. Tear the gluten free bread into chunks or cut it into cubes and spread evenly throughout the dish.

In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, brown sugar and vanilla extract. Pour the mixture evenly over the bread.

Cover the dish tightly and refrigerate overnight, or until ready to bake. You can also bake it right away if preferred.

  2. Make the Crumble Topping

In a separate bowl, combine the gluten free flour, brown sugar, cinnamon, salt and freshly grated nutmeg.

Add the cold butter and use a pastry cutter or fork to mix until the mixture resembles small crumbs.

Transfer the topping to a resealable bag and refrigerate until ready to use.

  3. Bake the French Toast

    Preheat the oven to 350°F.

Remove the casserole from the refrigerator and sprinkle the crumble topping evenly over the bread.

Bake for approximately 45 minutes for a softer, bread pudding-like texture. For a firmer, crispier texture, bake for 1 hour or slightly longer.

  4. Serve and Enjoy

Scoop into individual portions and serve warm. Top with butter, drizzle with warm maple syrup and finish with fresh blueberries.

Nonna's Tip

Prepare the casserole the night before and keep it refrigerated overnight. In the morning, simply add the crumble topping and bake. It's a great way to make hosting breakfast or brunch easier!
