Breakfast Bites
These savoury breakfast bites are filled with fluffy eggs, cheddar cheese and fresh red peppers, all baked inside golden puff pastry. They're perfect for breakfast, brunch or serving at your next gathering.
Ingredients
- 1 sheet of gluten free puff pastry, thawed
- 3 large eggs
- 3 tablespoons of cream or milk
- Red bell pepper, finely chopped
- Shredded cheddar cheese
- Salt and black pepper, to taste
- Unsalted butter, softened, for greasing
Instructions
- Prepare the muffin pan. Preheat your oven to 400°F (200°C). Lightly grease a muffin pan with softened unsalted butter.
- Prepare the puff pastry. Unfold the puff pastry sheet on a clean surface. Using a sharp knife, cut into approximately 2½ inch squares. Gently press each square into a muffin cup, shaping the pastry along the bottom and sides. Leave the corners sticking up to create a decorative shape when baked.
- Prepare the egg mixture. In a mixing bowl, whisk together the eggs, cream or milk, and a pinch of salt and black pepper until well combined.
- Fill the pastry. Add approximately ½ teaspoon of finely chopped red peppers and ½ teaspoon of shredded cheddar cheese to each pastry cup.
- Add the eggs. Carefully pour the egg mixture into each pastry cup, filling it only halfway to prevent overflowing during baking.
- Bake. Place the muffin pan in the preheated oven and bake for 15 to 20 minutes, or until the pastry is golden brown and the egg filling is fully set.
- Serve. Allow to cool slightly before removing from the muffin pan. Serve warm and enjoy!
Nonna's Tip
Less is more with this recipe! Make sure to leave enough room for the eggs, cheese and peppers to cook together. Avoid filling the pastry cups more than halfway with the egg mixture, as the filling will rise and may overflow while baking.
